For tonight's dinner, we had steak & leftover Mexican cauliflower rice 👌🏼. Here's my Cauliflower Mexican rice recipe:
🍚1 head of cauliflower (riced cauliflower)
🍚1 can of 🍅 sauce (Mexican hot style)
🍚Half an onion (diced) 🍚2 garlic clove
🍚1 tsp of coconut oil, olive oil, or vegetable oil 🍚1 tsp of garlic powder
🍚1/4 cup of water or chicken broth
🍚1 tsp of chicken flavor bouillon (optional)
🍚Salt to taste (optional)
In a large skillet, heat up the oil. Sauté onions and garlic cloves (for about 3-4 minutes). Add riced cauliflower and garlic powder. Cook for an additional 5-7 minutes. Mix in the 🍅 sauce, water or chicken broth, and salt or chicken flavor bouillon. Cover and cook for 5 minutes or until no liquid remains. Perfect for 🌮 night and so healthy. *update* Ended the day with 1,020 calories, 63 grams of protein, 17 net carbs (21 total) and 69 grams of fat. And ketones are present so just letting the fat burn while I sit here feeling full!
