Black Winter Truffle-Infused Scrambled Eggs. A decadent and delicious take on the old breakfast favourite! If you were like myself and wondering what all the kerfuffle was with truffles, head to either Mart Deli, Deli Planet or Wiffens at the Fyshwick Markets and get your hands on some of Canberra's own black winter truffles. Now for the recipe.
2 truffle infused free-range eggs (to infuse your eggs simply place eggs in a glass jar and place the truffle in amongst the eggs. Keep in fridge, tightly sealed, for at least 24 hours)
2 pieces of fresh sourdough
Small knob of butter
Splash of milk
Sea salt and pepper, to taste
Parsley, to garnish.
Crack eggs into a small mixing bowl. Whisk. Add a splash of milk.
Heat fry pan over medium heat and melt butter. When butter starts to bubble turn heat to low and gently pour in eggs.
Slowly move the outside edges of the eggs into the middle. Continue to do so until eggs are almost cooked. Meanwhile cook toast.
Once almost cooked remove eggs from heat and place on toast. (The eggs will continue to cook).
Season eggs with salt, pepper, parsley and finely shaved truffle. Serves 1.
